Recommended A/C parts

This weekend if the weather permits we plan to start pulling off some of the old AC components.  

So I want to make sure I'm not being dumb because I was seeing AC delete pulleys - that doesn't apply to v-belts right?  I can't see a reason we would need to have the belt hooked up, but making sure I'm not missing something.

It depends on whether the belt drives anything else (like across the water pump pulley).
