I think enjoying it is a good idea.
That's where I am with Big Blue, and it is feeling good. Yes, I have a lot of things left that need doing, but they are mostly one-day efforts or, as today, several in a day.
So that's my vote - enjoy it. Restoration can come later, and by then you'll probably know more about what you want the truck restored "to".
